Our Iron Goddess of Mercy (Ti Kwan Yin) Oolong is a legendary tea from the Fujian province in China. It is one of China's most-beloved oolongs and is extremely time-consuming to produce (well over a dozen distinct steps in the processing are observed). This tea produces a cup that is warm, soft and soothingly mineral in texture. Notes of toasted walnut and tender collard greens. Heat 32 fl oz of water until it's just off the boil then add the tea strainer. 3. After 4 minutes, remove the tea strainer, add 32 fl oz more of icy-cold water to the hot tea liquid, then transfer to your preferred tea dispenser. 4. Serve over ice and enjoy!
